Crudo

The flavours and vitality of the Mediterranean coast suffuse every dish served at Crudo, our exceptional seafood restaurant in Tangier. The name – Italian for “raw” – reflects the purity and freshness of the market-to-table ingredients and the simplicity and integrity of the food served in a spare, light-filled contemporary space, or in the shaded courtyard.

 

The day begins with breakfast, an ever-changing assortment of made-to-order morning classics, designed to be shared around our convivial communal tables. Choose from seasonal local produce, fragrant breads and pastries, homemade granola or aromatic jams made with fruit from our own gardens. It’s all accompanied by an enticing selection of regional specialties from around Morocco.

The menu takes its inspiration from the tastes of southern Europe at lunch and dinner, with freshly caught fish and seafood journeying straight from port to plate.

Meet Our Chef

Head Chef Chris Blake began his culinary career in his native Sydney, before setting off to discover the world and new gastronomic horizons. Before joining Fairmont Tazi Palace Tangier in July 2022, he honed his craft at Michelin-starred restaurants in England and France before further refining his skills in Dubai.

 

Chris draws his greatest inspiration from the people and places around him. “I truly believe the best way to learn about a country or a group of people is through food and sharing meals. The first place I always like to see when visiting somewhere new is the local food market.”

 

Chris’s vision for Fairmont Tazi Palace Tangier? To showcase the north of Morocco by highlighting regional products, from freshly caught fish and organic fruit and vegetables to cheese from Chefchaouen or nougat from Tangier. “I want our guests to experience something new and exciting, in a relaxed and unpretentious setting.”
